Week 14: #Waves4Change 2020 Sustainability Challenge – Eat Plant Based!

Why Take This Challenge?

You might be asking: what is eating plant based and how does it impact the environment?
Eating a plant-based diet can have a direct, positive impact on water conservation and pollution. One of the biggest impacts of eating plant based is reducing our carbon footprint. An estimation from the United Nations suggests that livestock accounts for ~14.5% of global greenhouse gas emissions. Livestock farms are also responsible for runoff, which directly impacts ecosystems and causes algal blooms. Moreover, eating a plant-based diet also directly effects water conservation. For example, producing 1 gallon of milk requires 1,000 gallons of water.

How Does This Challenge Benefit Me?

Plant based diets have shown great health benefits. Individuals who participate in a plant-based diet and lifestyle are said to have more energy and get better sleep. Challenging yourself to try new recipes would not only help reduce our carbon footprint and water consumption, but directly enhance our physical wellbeing and nutrition. Fruits, vegetables and whole grains are rich in antioxidants, vitamins and fiber.

Not sure where to start? Check out one of the plant-based meals below!

What if I Already Do This?

Challenge friends and family to reduce their dairy and meet consumption by participating in “Meatless Mondays.” While challenging friends and family, let them know meat is not our only source of protein. Offer them alternative protein options and ideas, while stressing fresh fruit and vegetables for fiber.

Prep This Weekend for a More Sustainable Week

One of the industries directly effected by the current pandemic are our meat processing facilities. Due to the shortages our grocery stores may be emptier than usual when we are purchasing our go-to meals. Now is a perfect time to give a “Meatless Monday” a try. Choose a dish from above or find one online to give plant-based a go!
